Anita’s Shrimp and Veggies Noodles Stir Fry

A delicious, very healthy and easy to make recipe with vibrant Asian flavors. Loaded with colorful fresh vegetables and shrimps, cooked in a vegetable stock. No starches in sauce. Enjoy!

Ingredients

1 lb. of egg noodles

2 cloves garlic, minced

2 lb. shrimps, peeled and deveined

2 cups of chicken or vegetable stock, unsalted

1 green bell pepper, sliced

1 egg beaten

3 carrots, shredded in ribbons with potato peeler

1 onion, sliced

2 cups fresh mushrooms, clean and sliced

2 tablespoons of Sesame oil

2 Tablespoons of low Sodium Soya Sauce

1/2 teaspoon crushed red pepper flakes

1 teaspoon garlic powder

1 Tablespoon rice vinegar

pinch of salt

pinch of sugar

Preparation

  1. Place egg noodles in hot boiling water. Cook until tender following package instructions. Set aside.
  2. Heat sesame oil at medium heat. Add onions, bell pepper and carrots. Sate until slightly soft. Add garlic and mushrooms. Stir fry until cook.
  3. Add the shrimps. Seasoned with salt, pepper, sugar, garlic powder, and crushed red pepper flakes. Add in soya sauce, vinegar and chicken stock. Reduce heat to low, and cook shrimps until they turn pink, and sauce is reduced. Add in beaten egg. Stir, egg will cook in no time.
  4. Incorporate boiled noodles. Stir and mix well with all veggies. Enjoy and Spread the Love!
