Anita’s Easy Baked Healthy Delicious Pumpkin Donuts

These Baked Pumpkin donuts will become your new favorite Fall treat. They’re ultra soft and fluffy with warm spices that pack in flavor in every single bite!

Ingredients

1 cup All-purpose flour

1/3 cup packed brown sugar

1 1/2 teaspoon pumpkin pie spice

1 Tablespoon Turmeric, ground

1/3 teaspoon ginger, ground

1/4 teaspoon cloves, ground

1/2 teaspoon cinnamon, ground

1/4 teaspoon baking soda

1 1/2 teaspoon baking powder

1/2 cup pumpkin puree

2 eggs

1/4 cup milk

2 Tablespoon vegetable oil

1 teaspoon vanilla extract

Preparation

  1. Pre-heat oven to 325 grades Farenheit.
  2. Whisk together in a small bowl milk, eggs, vegetable oil, pumpkin puree and vanilla extract until well combined.
  3.  Add in all dry ingredients: All-purpose flour, brown sugar, baking soda, baking powder, ground cinnamon, pumpkin spice, cloves, ginger, and turmeric. Whisk all well till combined. 
  4. Pour, about 1/4 cup of the batter into each donut cavity. Bake the donuts for about 15 minutes or until donuts spring back when touched. Remove from oven and let them cool slightly in donut mold for about 10 minutes.

 

  1. Meanwhile, prepare Glaze: Use 1 1/2 cups of confectioners’ sugar, add 2 Tablespoon of milk, 1/3 teaspoon vanilla and some drops of food coloring of your choice. 

Note: To make my OUT OF SPACE look, divide icing into separate bowls so you can design and glaze each one differently. Don’t mix in the coloring. Dip in the donuts into the dots of food coloring of your choice and rotate the donut slightly using your hands. Enjoy!
