Anita’s Caesar Salmon Roasted with Tomato, Onions, and Capers

Ingredients

3-4 Pounds Atlantic Salmon fillet whole

1 large onion, chopped

3 garlic cloves, minced

1- 5 ounces can diced petite tomatoes

3 Tablespoon extra virgin olive oil, one tbsp. for pan

1 teaspoon dried basil

1/2 teaspoon paprika

Salt and Pepper TT

Caesar Dressing (see my recipe Rustic Caesar Salad)

Preparation

  1. Preheat your oven to 400 grades Fahrenheit
  2. Place Salmon fillet whole over a baking pan lined with foil paper and drizzle with olive oil.SALMON WHOLE RAW
  3. Sprinkle pepper over salmon. Bake for about 15  minutes, should be a little rare as it will continue on cooking later with Caesar dressing on top. Remove from oven. Set aside. Lower temperature to 350 grades Fahrenheit.

Sauce Preparation

  1. Heat olive oil in a large skillet  on medium-high heat. Add onions and garlic. Season with salt, pepper, paprika and dried basil.
  2. Stirring for about 5 minutes till onions are slightly tender. Add diced tomatoes. Cook and simmer for 10 minutes.SALMON WHOLE ADDING TOMATOES TO GARLIC3. Incorporate drain capers into the sauce. Stir well and cook for another 2 minutes. Set sauce aside.SALMON WHOLE TOPPED CAPERS SAUCE4. Take the Caesar dressing and spoon over the salmon whole. SALMON WHOLE WITH CEASAR SALAD DRESSING5. Place salmon again into the pre-heated 350 grades Fahrenheit oven and bake for another 10 minutes or until salmon is fork flaky.

6. Sprinkle the capers, tomato and onion sauce over top of the flaky salmon fish.SALMON WHOLE ADDING SAUCE TOP             7. Serve over a healthy Edamame couscous salad seasoned with just lemon-olive oil vinaigrette. Enjoy!SALMON PIECE
