Anita’s delicious 3 ingredients Salad

Sweet, caramelized walnuts, salty feta cheese makes this salad simply delicious and healthy!

Ingredients

A package of Fresh Spinach (6 to 8 ounces)

1 cup of walnuts

1/2 cup feta cheese, crumbled

To Caramelized walnuts:

  1. Melt 1 Tablespoon butter in the microwave. Set aside. Preheat oven to 375 grades Farenheit.
  2. Line a baking sheet with wax paper.
  3. Toss together using a zip log bag: 2 Tablespoon brown sugar, 1/2 teaspoon cinnamon, 1 Tablespoon honey, pinch of salt. Add melted butter and toss all together in bag.
  4. Lay walnuts flat in the lined baking sheet. Roast for 20 minutes or until golden brown and caramelized. Let them cool and remove from pan.
Mix in the bottom of a large bowl: 2 tablespoon of Olive oil, 1 teaspoon white balsamic vinegar or any vinegar of your choice, and 1 teaspoon of the juice of a lemon. Whisk well. Lay bed of spinach on top. Toss well. Sprinkle feta cheese and roasted caramelized walnuts over the top. Enjoy!
