Anita’s Delicious Spicy Shrimp Stacks with Homemade Black Beans, Rice and Avocado

Ingredients for Spicy Shrimp
2-pound raw shrimp, peeled and deveined
5 garlic cloves, minced
2 Tablespoons olive oil
1 Tablespoon butter
1small jalapeno, diced
1/2 teaspoon garlic powder
1/3 teaspoon smoked paprika
1/3 teaspoon red pepper flakes
2 tablespoons cilantro, chopped
1 teaspoon salt
1/4 cup lemon juice
Preparation
- Heat large deep skillet with olive oil and butter on medium heat. Add shrimps and cook for about 2-3 minutes. Incorporate garlic and diced jalapenos. Seasoned with salt, garlic powder, paprika and red pepper flakes. Cook until shrimps turn pink in color. Add cilantro. Add lemon juice and stir. Remove from heat. Set aside.

To assemble: Use a ring, place cooked rice on the bottom, black beans over rice, another layer of cooked rice and topped with spicy shrimps. I left some shrimps with shell in as shown in my picture. Garnish with micro greens and diced avocado. Sprinkle with sesame black seeds. Enjoy!
