Anita’s Green Onions Frittata
Ingredients
4-5 eggs, beaten
2 Tablespoon extra Virgin Olive Oil
1 bunch scallions (green onions),sliced
1 Tablespoon milk
1/4 cup parmesan cheese, finely grated
1/4 teaspoon kosher salt
1/3 teaspoon black pepper, freshly ground
Preparation
- Heat a medium-size skillet over medium heat. Add extra Virgin Olive Oil. Incorporate sliced scallions to the pan and sauté until slightly soft fro about 2 to 3 minutes.
- Whisk milk into eggs beaten in a small bowl. Add salt and pepper.
- Pour egg mixture over scallions and do not stir. Lower the heat and let it cook until edges are crispy and eggs are firm.
- Add grated parmesan cheese on top.
- Serve warm or at room temperature. Decorate with radishes. Delicious and easy to make. Enjoy!
