Anita’s Healthy Baked Cheesy Zucchini-Dill Bites

This super healthy and easy to make recipe will become your new favorite breakfast or anytime snack. All made in a MUFFIN PAN 🙂

Ingredients

2 zucchinis, grated with skin on

1 egg, whisked

2 spring onions, finely diced

2 Tablespoon flour

3-4 cups fresh dill, chopped

1/3 cup of water

3 tablespoon Pecorino Romano cheese, grated

1 teaspoon salt

1/2 teaspoon black pepper

1/3 teaspoon nutmeg, ground

Oil a muffin tin (12 servings)

Preparation

  1. Preheat oven to 375 grades Farenheit.
  2. After zucchini are grated, sprinkle with a pinch of salt. Let it sit for about 15 minutes to release as much liquid as possible. Use your hands to squeeze the liquid and transfer into a bowl.
  3. Add chopped dill, spring onions, egg, flour, 1/3 cup of water, grated cheese, salt, pepper, and nutmeg. Mix all ingredients well.
  4. Grab a large spoon or a cup of espresso to equally distribute mixture into the greased muffin tin.
  5. Place into the pre-heated oven in middle rack.
  6. Bake for about 30 to 35 minutes, until edges and bottom of patties are crispy and golden. You can use a butter knife to remove them from muffin tin.
  7. Serve at room temperature, warm or cold. Enjoy at any time!
