
Anita’s Light and Full of Flavor Arugula-Tuna Salad with Crunchy Potato Chips
Loving the peppery taste of Arugula, crunchy potato chips, combined with the sweetness of cherry tomatoes with a light and simple Balsamic dressing makes this Protein packed salad a wonderful choice for a fast lunch or Dinner. Enjoy and Share the LOVE!
Ingredients
Albacore Tuna in water, rinsed
Arugula, washed and drained
cherry tomatoes
1 small onions, small diced
Salt and Pepper TT, to taste
Balsamic glaze
2 Tablespoon Plain Yogurt
1 Tablespoon fresh lemon juice
! teaspoon light Mayonnaise
2 or 3 crunchy potato chips, for topping (optional)
For the Tuna
Just combine flaky can albacore tuna, mayonnaise, yogurt, lemon juice and seasoned with salt and pepper. Mix all well till combined. Set aside.
For the Arugula Salad
Just mix 1 Tablespoon of balsamic Glaze (see recipe in my site), with 2 Tablespoon of Extra Virgin Olive Oil and two tablespoon of fresh lemon juice, add cherry tomatoes. No salt and pepper is needed, as you added it in the tuna. Toss all ingredients together. Place salad on a plate drizzle with balsamic glaze and spoon tuna on top. Couple potato chips on the top for extra crunch. Enjoy and Spread the Love!
