Anita’s Most Moist and Delicious Wine Poached Pear Loaf

As the fall season approaches, nothing better than enjoying a slice of this spongy, spicy cinnamon, cloves and star anise cake. Sweet pears are poached with these spices in red wine that will fill the air of your whole entire cozy home and is the perfect sweet finish to any harvest meal!

Ingredients for Poached Pears

3 1/2 cups Red Wine of your choice

1 cup of honey

4 star anise

2 cinnamon sticks

4 or 5 whole cloves

pinch of nutmeg

3 Red firm not Ripe Anjou Pear, peeled

juice of half a lemon

Spongy and Spicy Loaf Ingredients

3 cups All-purpose flour, sifted

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/3 cup brown sugar

1/4 cup of granulated sugar

1/2 cup coconut oil

3 eggs

1/2 cup Plain Yogurt

1/2 teaspoon cinnamon, ground

1/2 teaspoon anise, ground

pinch of cloves, ground

pinch of nutmeg, ground

Preparation for Poaching Pears: 

  1. Add into a large saucepan at medium heat, wine, honey, whole star anise, cloves, and cinnamon sticks                               
  2. When this wine mixture starts to boil, add pears. Lower heat and let it simmer for about 40-45 minutes. 
  3. Remove pears from saucepan and let them cool. Set aside. 
  4. Boil the wine liquid left at low heat until reduced and become a very thick syrup. Remove from heat, add fresh lemon juice and stir. Set aside. 

 

Preparing Spicy loaf

  1. Preheat oven to 350 grades Farenheit.
  2. In a small bowl, mix flour, baking soda, baking powder, ground cinnamon, cloves, nutmeg, and anise.
  3. Use another bowl and whisk together, coconut oil, eggs, granulated sugar and brown sugar. Add plain yogurt and stir all together.
  4. Pour mixture into a greased loaf pan. Insert Pears with stem into the mixture evenly.
  5. Bake for 35 minutes. Remove from oven and cover loaf pan with foil. Place in oven again and bake for another extra 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Drizzle a serving plate with your wine syrup and serve your pear loaf slices over. You can also pour syrup over the top. Enjoy!
