Anita’s Simple and Delicious Grilled Eggplant

Ingredients

2-3 medium size eggplant, sliced into 1/2-inch-thick rounds

1 garlic clove, minced

Kosher Salt

Fresh Ground black pepper

3-4 Tablespoon Olive Oil

Preparation

  1. In a large zip-log bag combine minced garlic, olive oil, salt, pepper and sliced eggplant. Shake your bag to coat well all sliced eggplants. Set aside.
  2. Heat a gas grill at medium high.
  3. Arrange eggplant on the heated grill evenly. Grill for 2 to 3 minutes on each side or until eggplants are with char marks and tender.
  4. Enjoy best while is warm with pita bread, over a salad or as a side dish.
