Anita’s Super Easy and Delicious Spanakopita Bites with Kale
Welcome your family and guests with these traditional Greek Spanakopita with store-bought mini phyllo shells that will take your time out during these Holidays! Super crispy and creamy bites with a little spin using kale instead of Spinach. Spread the Love!
Ingredients
1 package of pre-made cups Fillo Dough, thawed
10-12 ounces chopped fresh kale
1/3 cup scallions, minced
1/2 cup fresh dill, minced
1/2 cup Feta cheese, crumbled
2 Tablespoons parsley, chopped
2 eggs, beaten
cherry tomatoes for something refreshing and festive garnish
Salt and Pepper to Taste

6 ounces cream cheese, softened
Preparation
- Preheat oven to 375 grades Farenheit.
- In a medium size bowl, combine chopped kale, scallions, parsley, dill, crumble feta, cream cheese and eggs. Seasoned with salt and pepper. Whish until well combined and smooth.
- Prepared a baking sheet pan with foil and place premade Fillo dough cups, do not need to grease pan.
- Use 1 Tablespoon of filling into each cup.
- Bake for about 20-25 minutes until golden brown.
- Place cherry tomatoes cut in half on each cup. Enjoy!
