Anita’s Simple and Delicious Marinara Sauce

Ingredients

3 cups of crushed tomatoes

1 large onion, chopped

3 cloves garlic, minced

2 Tablespoon Extra Virgin Olive Oil

1 Tablespoon dried oregano

1 Tablespoon dried basil

1 Tablespoon tomato paste

1/2 teaspoon granulated sugar

1 teaspoon Kosher salt

1 teaspoon freshly ground black pepper

1/4 cup water

1/2 cup white dry wine

Preparation

  1. Use a large saucepan and sate onions in olive oil until soft for about 3 minutes. Add garlic and cook for another minute.
  2. Add crushed tomatoes, salt, black pepper, dried oregano, dried basil and sugar.
  3. Cook sauce at medium heat for about 20 minutes. Add tomato paste dissolved in a 1/4 cup of water.
  4. When sauce starts simmering lower the heat and add white wine. Cook sauce for another 10 to 15 minutes until sauce has reduced and reached desired consistency. Enjoy in your pizzas, pasta dishes, or as base for other sauces..Enjoy!

Anita’s Sourdough Grilled Cheese Sandwich

Ingredients

6 slices sourdough bread

3 Tablespoon butter

2 Tablespoon Dijon mustard

2 Tablespoon Mayonnaise

3 plum tomatoes, sliced

1/2 cup black olives

1 cup Gruyere cheese, thinly sliced

1/2 cup Havarti cheese, thinly sliced

Preparation

  1. Heat a large skillet over low-medium heat.
  2. Place 4 slices of bread and butter the top and bottom side. Place bread butter side down. Spread mustard and mayo all over inside.
  3. Put 2 large slices of cheeses over both sides of bread. Lay the olives, and tomatoes on top of cheese.
  4. Cook, without pressing and when cheese is starting to melt turn sandwiches with a spatula to brown and melt in the other side for about 3 to 4 minutes on each side.
  5. Repeat process with rest of sandwiches.
  6. Enjoy next to a lobster or a warm tomato soup.(see recipe on my page).
